I live in Louisville, and the Kentucky Derby is a magical time that has the whole town abuzz! It ushers in springtime with colorful dresses and bowties. If you're not going to the Derby, chances are you are going to a Derby party. I'm one of the locals that usually just goes to a party, but not without the famous Derby Pie in hand. Derby pie is a chocolate pecan pie, that is ooey gooey caramely delicious. Along with mint juleps, Derby Pie is one of those traditions that makes the day even more special. Here I'm sharing my recipe for Derby Pie that is always a hit!
Derby Pie
Ingredients
1 cup sugar
1cup light corn syrup
4 eggs
½ cup butter—melted
1 cup chopped pecans
1 cup chocolate chips
1 tsp Vanilla
2 TBS Bourbon (optional)
9” unbaked pie shell
Directions
Preheat oven to 350
Combine sugar, corn syrup, and eggs in a mixing bowl. Beat at low speed until well blended. Stir in remaining ingredients and pour into a 9” unbaked pie shell. Bake 45-50 minutes or until set. Enjoy!
